Ingredients
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 cup wild rice
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1/2 cup cream
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, sauté the onions, carrots, and celery until softened.
- Add garlic and thyme, stirring for 1 minute.
- Mix in the shredded chicken, wild rice, broth, and season with salt and pepper.
- Bring to a boil, then reduce heat and simmer until chicken and rice are tender, about 45 minutes.
- Stir in the cream and adjust seasoning.
- Serve garnished with fresh parsley.
Notes
Use leftover rotisserie chicken for convenience and flavor. Adjust seasoning as needed at the end.
