Description

A comforting and hearty soup made with tender chicken, nutty wild rice, and vibrant vegetables, perfect for chilly days.


Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 cup wild rice
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1/2 cup cream
  • Salt and pepper, to taste
  • Fresh parsley, for garnish


Instructions

  1. In a large pot, sauté the onions, carrots, and celery until softened.
  2. Add garlic and thyme, stirring for 1 minute.
  3. Mix in the shredded chicken, wild rice, broth, and season with salt and pepper.
  4. Bring to a boil, then reduce heat and simmer until chicken and rice are tender, about 45 minutes.
  5. Stir in the cream and adjust seasoning.
  6. Serve garnished with fresh parsley.

Notes

Use leftover rotisserie chicken for convenience and flavor. Adjust seasoning as needed at the end.
