Description
A one-pan Chicken Cheesesteak Skillet meal combining tender chicken, vibrant veggies, and melted provolone cheese for a hearty, flavorful dish.
Ingredients
- 1 cup shredded provolone cheese
 - Kosher salt and fresh ground black pepper, to taste
 - 1/2 teaspoon smoked paprika
 - 1 1/2 teaspoons Italian seasoning blend
 - 1 1/4 pounds boneless, skinless chicken breasts, sliced thin
 - 1 green bell pepper, sliced thin
 - 1 red bell pepper, sliced thin
 - 1 yellow onion, cut in half and sliced thin
 - 2 tablespoons olive oil, separated
 
Instructions
- Heat 1 tablespoon olive oil in a big skillet over medium-high heat.
 - Add onions and both bell peppers, seasoning with salt and pepper. Cook for a few minutes until soft; then remove and set aside.
 - In the same skillet, add remaining olive oil and sliced chicken. Season with smoked paprika, Italian seasoning, salt, and pepper, spreading chicken flat.
 - Cook for a few minutes without stirring to brown. Then continue cooking, stirring occasionally, until chicken is cooked through.
 - Return cooked veggies and their juices to the skillet. Mix everything together.
 - Sprinkle provolone cheese on top. Cover the skillet and let cheese soften.
 - Serve hot from the pan.
 
Notes
Slice chicken and vegetables thinly for even cooking. Adjust spices to taste; add jalapeños for heat.
