Description

A one-pan Chicken Cheesesteak Skillet meal combining tender chicken, vibrant veggies, and melted provolone cheese for a hearty, flavorful dish.


Ingredients

  • 1 cup shredded provolone cheese
  • Kosher salt and fresh ground black pepper, to taste
  • 1/2 teaspoon smoked paprika
  • 1 1/2 teaspoons Italian seasoning blend
  • 1 1/4 pounds boneless, skinless chicken breasts, sliced thin
  • 1 green bell pepper, sliced thin
  • 1 red bell pepper, sliced thin
  • 1 yellow onion, cut in half and sliced thin
  • 2 tablespoons olive oil, separated


Instructions

  1. Heat 1 tablespoon olive oil in a big skillet over medium-high heat.
  2. Add onions and both bell peppers, seasoning with salt and pepper. Cook for a few minutes until soft; then remove and set aside.
  3. In the same skillet, add remaining olive oil and sliced chicken. Season with smoked paprika, Italian seasoning, salt, and pepper, spreading chicken flat.
  4. Cook for a few minutes without stirring to brown. Then continue cooking, stirring occasionally, until chicken is cooked through.
  5. Return cooked veggies and their juices to the skillet. Mix everything together.
  6. Sprinkle provolone cheese on top. Cover the skillet and let cheese soften.
  7. Serve hot from the pan.

Notes

Slice chicken and vegetables thinly for even cooking. Adjust spices to taste; add jalapeños for heat.
