Ingredients
- 2 cups cooked chicken, roughly chopped
- 1 cup cottage cheese (4% milk fat preferred)
- 1/4 cup mayonnaise or Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 teaspoon black pepper
- 1/2 cup diced celery
- 1/4 cup minced red onion
- 2 tablespoons chopped fresh herbs (parsley, dill, or chives)
Instructions
- In a bowl, whisk together the cottage cheese, mayonnaise (or yogurt), Dijon mustard, lemon juice, and black pepper; taste for seasoning.
- Fold in the diced celery, minced red onion, and chopped herbs.
- Chill for 20-30 minutes to allow flavors to meld.
- Serve on whole-grain bread, lettuce cups, or over grain bowls as desired.
Notes
Use a meat thermometer to ensure chicken reaches 165°F (74°C) for safety. Adjust salt carefully as cottage cheese contains sodium.
