A comforting casserole combining tender chicken, earthy wild rice, and creamy sauce for a family favorite dish.
Ingredients
- 2 cups wild rice
- 2 cups cooked chicken, shredded
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups cream or dairy-free alternative
- 1 cup chicken broth
- 1 teaspoon fresh thyme
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- 1 tablespoon lemon juice
- Slivered almonds or walnuts (optional)
Instructions
- Cook wild rice according to package instructions until tender.
- In a skillet, sauté onions and garlic until fragrant.
- In a large bowl, combine cooked wild rice, sautéed onions and garlic, shredded chicken, cream, chicken broth, thyme, salt, pepper, and lemon juice.
- Mix well and transfer to a greased 9×13-inch baking dish.
- If using, sprinkle cheese and nuts on top.
- Bake in a preheated oven at 350°F (175°C) for 45 minutes or until bubbly and golden.
Notes
Keep leftovers in an airtight container for 3-4 days. This casserole can also be frozen for up to 3 months.
