Description

A comforting casserole combining tender chicken, earthy wild rice, and creamy sauce for a family favorite dish.


Ingredients

  • 2 cups wild rice
  • 2 cups cooked chicken, shredded
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups cream or dairy-free alternative
  • 1 cup chicken broth
  • 1 teaspoon fresh thyme
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • 1 tablespoon lemon juice
  • Slivered almonds or walnuts (optional)


Instructions

  1. Cook wild rice according to package instructions until tender.
  2. In a skillet, sauté onions and garlic until fragrant.
  3. In a large bowl, combine cooked wild rice, sautéed onions and garlic, shredded chicken, cream, chicken broth, thyme, salt, pepper, and lemon juice.
  4. Mix well and transfer to a greased 9×13-inch baking dish.
  5. If using, sprinkle cheese and nuts on top.
  6. Bake in a preheated oven at 350°F (175°C) for 45 minutes or until bubbly and golden.

Notes

Keep leftovers in an airtight container for 3-4 days. This casserole can also be frozen for up to 3 months.
