Description

Delicious treats that combine chewy brownie and sweet cookie dough in bite-sized portions, perfect for any chocolate lover.


Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • Optional: 1/4 cup chopped nuts (walnuts or pecans) or chocolate chunks
  • 1/2 cup unsalted butter
  • 1/3 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: 1/4 cup chopped nuts or different chocolate chips (white, dark, peanut butter)


Instructions

  1. Make the Cookie Dough: Cream together 1/2 cup unsalted butter, brown sugar, and granulated sugar until light and fluffy. Add vanilla and egg, mix well. Gradually add flour, baking powder, and salt, then fold in chocolate chips and optional nuts. Chill for 30 minutes.
  2. Prepare Brownie Batter: Melt 1/2 cup unsalted butter with cocoa powder. In a bowl, whisk together sugar and eggs, then add melted cocoa mix. Stir in flour, baking powder, and salt until blended.
  3. Assemble Brownie Bombs: Grease a mini muffin tin. Spoon brownie batter into each cup, press a cookie dough ball in the center, and cover with more brownie batter.
  4. Bake at 350°F (175°C) for 15–18 minutes, until edges are set but centers are gooey. Cool in the pan, then remove or chill before serving.

Notes

Serve warm or at room temperature, and pair with vanilla ice cream if desired. Store in an airtight container for up to 3 days at room temperature or refrigerate for up to a week.
