Ingredients
- 1 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup cocoa powder
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semisweet chocolate, melted
- 1/2 cup white chocolate, melted
- 1/2 cup crushed peppermint candies
Instructions
- Cream the butter and sugar together in a bowl.
- Add the eggs and vanilla, mixing until well combined.
- Fold in cocoa powder, flour, baking soda, and salt.
- Scoop dough onto a lined baking sheet and chill for 30–60 minutes.
- Bake at 350°F (175°C) for 10–12 minutes until edges are set.
- Cool the cookies on a wire rack.
- Melt the semisweet and white chocolate.
- Spread melted chocolate over cooled cookies and sprinkle with crushed peppermint.
