Description

These festive cookies feature vibrant swirls of red and green dough, combining buttery flavor with a hint of peppermint for a delicious holiday treat.


Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Red gel food coloring
  • Green gel food coloring


Instructions

  1. In a large bowl, cream the softened butter and sugar until light and fluffy.
  2. Beat in the egg, vanilla extract, and peppermint extract.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the dough in half and dye one half with red food coloring and the other with green food coloring.
  6. Roll each colored dough between parchment paper into rectangles about 1/4 inch thick.
  7. Layer the green dough over the red dough and roll them up tightly into a log.
  8. Wrap the log in plastic wrap and refrigerate for at least 2 hours.
  9. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  10. Slice the chilled dough into approximately 1/4 inch thick rounds and place them on the prepared baking sheets.
  11. Bake for 10-12 minutes, or until the edges are lightly golden.
  12. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, use gel food coloring for vibrant colors and chill the dough before rolling to prevent sticking.
