Ingredients
- 2 3/4 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Red gel food coloring
- Green gel food coloring
Instructions
- In a large bowl, cream the softened butter and sugar until light and fluffy.
- Beat in the egg, vanilla extract, and peppermint extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the dough in half and dye one half with red food coloring and the other with green food coloring.
- Roll each colored dough between parchment paper into rectangles about 1/4 inch thick.
- Layer the green dough over the red dough and roll them up tightly into a log.
- Wrap the log in plastic wrap and refrigerate for at least 2 hours.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Slice the chilled dough into approximately 1/4 inch thick rounds and place them on the prepared baking sheets.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For best results, use gel food coloring for vibrant colors and chill the dough before rolling to prevent sticking.
