Description

A comforting beef stew with tender carrots and hearty potatoes, perfect for chilly weather and family gatherings.


Ingredients

  • 2 lbs beef chuck, cut into bite-sized pieces
  • 4 cups beef broth
  • 3 large carrots, sliced
  • 4 medium potatoes, cubed
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
  • 2 bay leaves
  • Salt and pepper to taste


Instructions

  1. In a heavy-bottomed pot, heat olive oil over medium-high heat. Add beef chuck pieces and sear until browned on all sides.
  2. Add chopped onion and minced garlic to the pot, cooking until softened.
  3. Pour in beef broth, then add carrots, potatoes, thyme, and bay leaves. Stir to combine.
  4. Bring the stew to a simmer and cover the pot. Reduce heat to low and let cook for 2 hours, or until the beef and vegetables are tender.
  5. Remove bay leaves before serving. Adjust seasoning with salt and pepper as needed.

Notes

For a richer flavor, consider adding a splash of red wine or soy sauce during cooking.
