Instructions
- Heat olive oil in a large pan over medium heat. Add onion, garlic, and ginger, sauté until fragrant.
- Add cubed chicken and cook until browned.
- Stir in curry powder, cumin, and turmeric. Cook for an additional minute.
- Pour in the coconut milk, bring to a gentle simmer.
