Ingredients
- 1.5 lbs cubed chicken breasts
- 1 can (14 oz) full-fat coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 1 lime, juiced
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- Salt, to taste
- Fresh cilantro, for garnish
- Rice or naan, for serving
Instructions
- Marinate the cubed chicken in lime juice, turmeric, cumin, coriander, and salt for at least 30 minutes.
- Sauté onions, garlic, and ginger in a large pot until fragrant.
- Add the marinated chicken, cooking until browned.
- Stir in the coconut milk and bring to a gentle simmer, allowing the flavors to meld for about 20 minutes.
