Ingredients
- 1 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup milk
- 2 cups flaked coconut
- 1 cup brown sugar
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a baking dish.
- Cream butter and sugar until fluffy.
- Gradually add eggs and vanilla, mixing well.
- In a separate bowl, combine dry ingredients.
- Alternate adding dry ingredients and milk to the butter mixture until well combined.
- Pour batter into the prepared baking dish.
- Mix together coconut, brown sugar, and nuts (if using) and set aside.
- Bake the cake for about 30-35 minutes, adding the coconut topping halfway through the baking time.
- Once done, let the cake cool for at least 10 minutes before slicing and serving.
