Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 2 tablespoons espresso powder (or finely ground instant coffee)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2–3 tablespoons milk, if dough feels too dry
- Optional: extra sugar or cinnamon sugar for rolling
Instructions
- Beat the softened butter and granulated sugar together until light and fluffy.
- Mix in the egg and vanilla extract until smooth.
- In another bowl, whisk together flour, espresso powder, baking powder, and salt.
- Gradually add the dry mixture into the wet mixture. Add milk if the dough feels crumbly.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 350°F (175°C).
- Roll the dough into balls, flatten slightly, and place on a lined baking sheet. Optionally roll in sugar.
- Bake for 8–10 minutes, until edges are set. Cool on the pan for 5 minutes before transferring to a cooling rack.
Notes
Store in an airtight container for up to a week or freeze for longer storage. Thaw at room temperature before serving.
