Description

Delightful coffee-infused sugar cookies, perfect for coffee lovers and sweet snack enthusiasts.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 tablespoons espresso powder (or finely ground instant coffee)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 23 tablespoons milk, if dough feels too dry
  • Optional: extra sugar or cinnamon sugar for rolling


Instructions

  1. Beat the softened butter and granulated sugar together until light and fluffy.
  2. Mix in the egg and vanilla extract until smooth.
  3. In another bowl, whisk together flour, espresso powder, baking powder, and salt.
  4. Gradually add the dry mixture into the wet mixture. Add milk if the dough feels crumbly.
  5. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  6. Preheat the oven to 350°F (175°C).
  7. Roll the dough into balls, flatten slightly, and place on a lined baking sheet. Optionally roll in sugar.
  8. Bake for 8–10 minutes, until edges are set. Cool on the pan for 5 minutes before transferring to a cooling rack.

Notes

Store in an airtight container for up to a week or freeze for longer storage. Thaw at room temperature before serving.
