Description
A delicious and nutritious chicken noodle soup that’s easy to make and perfect for cozy family dinners.
Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 pound bone-in, skin-on chicken thighs
- 6 cups chicken broth
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 teaspoon fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups egg noodles
- Fresh parsley, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent.
- Add the chicken thighs, chicken broth, carrots, celery, thyme, salt, and pepper. Bring to a simmer.
- Cover and cook for 25 minutes, or until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Add the egg noodles and cook for an additional 8-10 minutes or until the noodles are tender.
- Serve hot, garnished with freshly chopped parsley.
Notes
For a gluten-free version, substitute regular noodles with gluten-free noodles or use quinoa. Adjust seasoning to taste and experiment with adding other vegetables as desired.
