Description

A delicious and nutritious chicken noodle soup that’s easy to make and perfect for cozy family dinners.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 pound bone-in, skin-on chicken thighs
  • 6 cups chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 teaspoon fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups egg noodles
  • Fresh parsley, for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent.
  2. Add the chicken thighs, chicken broth, carrots, celery, thyme, salt, and pepper. Bring to a simmer.
  3. Cover and cook for 25 minutes, or until the chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Add the egg noodles and cook for an additional 8-10 minutes or until the noodles are tender.
  6. Serve hot, garnished with freshly chopped parsley.

Notes

For a gluten-free version, substitute regular noodles with gluten-free noodles or use quinoa. Adjust seasoning to taste and experiment with adding other vegetables as desired.
