Description

A warm and nutritious stew made with ground turkey and sweet potatoes, perfect for cozy nights.


Ingredients

  • 1 pound Ground turkey (extra lean)
  • 2 medium Sweet potatoes (peeled and chopped into cubes)
  • 1 medium Onion (finely diced)
  • 3 cloves Garlic (minced)
  • 2 medium Carrots (sliced or diced)
  • 2 stalks Celery (chopped)
  • 4 cups Low-sodium chicken broth
  • 1 can Diced tomatoes (include juices)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • to taste Salt and pepper
  • to taste Fresh parsley (chopped for garnish)
  • as needed Greek yogurt or sour cream (optional)


Instructions

  1. In a large skillet over medium heat, cook the ground turkey until it’s no longer pink. Drain any excess fat.
  2. Transfer the cooked turkey to a crockpot. Add the sweet potatoes, onion, garlic, carrots, and celery.
  3. Pour in the chicken broth and diced tomatoes. Stir in the ground cumin and smoked paprika. Season with salt and pepper to taste.
  4. Cover the crockpot and cook on low for 6 to 8 hours, or on high for 4 to 5 hours, until the vegetables are tender.
  5. Once done cooking, taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley and a dollop of Greek yogurt or sour cream if desired.

Notes

Feel free to add other vegetables like bell peppers or spinach for extra nutrients. For a spicier version, add cayenne pepper or jalapeños.
