Description
A warm and nutritious stew made with ground turkey and sweet potatoes, perfect for cozy nights.
Ingredients
- 1 pound Ground turkey (extra lean)
- 2 medium Sweet potatoes (peeled and chopped into cubes)
- 1 medium Onion (finely diced)
- 3 cloves Garlic (minced)
- 2 medium Carrots (sliced or diced)
- 2 stalks Celery (chopped)
- 4 cups Low-sodium chicken broth
- 1 can Diced tomatoes (include juices)
- 1 teaspoon Ground cumin
- 1 teaspoon Smoked paprika
- to taste Salt and pepper
- to taste Fresh parsley (chopped for garnish)
- as needed Greek yogurt or sour cream (optional)
Instructions
- In a large skillet over medium heat, cook the ground turkey until it’s no longer pink. Drain any excess fat.
- Transfer the cooked turkey to a crockpot. Add the sweet potatoes, onion, garlic, carrots, and celery.
- Pour in the chicken broth and diced tomatoes. Stir in the ground cumin and smoked paprika. Season with salt and pepper to taste.
- Cover the crockpot and cook on low for 6 to 8 hours, or on high for 4 to 5 hours, until the vegetables are tender.
- Once done cooking, taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley and a dollop of Greek yogurt or sour cream if desired.
Notes
Feel free to add other vegetables like bell peppers or spinach for extra nutrients. For a spicier version, add cayenne pepper or jalapeños.
