Ingredients

  • 1 lb chicken, cooked and shredded
  • 1 cup orzo pasta
  • 2 large onions, sliced
  • 2 cups chicken broth
  • 1 cup Gruyère or Swiss cheese, shredded

  2. In a skillet, heat olive oil over medium heat and sauté onions until golden brown, about 20 minutes.
  3. Meanwhile, cook orzo in salted water until slightly undercooked, about 6-7 minutes. Drain and set aside.
  4. In a large bowl, combine cooked chicken, sautéed onions, chicken broth, thyme, salt, pepper, and orzo.
  5. Transfer the mixture to a deep casserole dish and top with shredded cheese.
