Description
Cowboy Stew is a hearty one-pot meal infused with tender beef, savory beans, and a variety of vegetables, perfect for warming up on chilly evenings.
Ingredients
- 2 lbs chuck roast, cut into cubes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 bell pepper, chopped
- 4 cups beef broth
- 1 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions
- In a large heavy-bottomed pot, brown the cubed chuck roast over medium heat until browned on all sides.
- Add chopped onion and minced garlic; sauté until fragrant.
- Add carrots, potatoes, and bell pepper, and sauté for a few minutes.
- Stir in the chili powder, cumin, salt, and pepper.
- Mix in kidney beans and black beans, then add beef broth.
- Bring to a boil, then reduce heat and let it simmer for at least 30 minutes until flavors meld together and stew thickens.
- Serve hot, garnished with fresh parsley or cilantro.
Notes
For a spicy version, add diced jalapeños or a dash of hot sauce. You can also make it vegetarian by substituting beef with mushrooms or tempeh.
