Description

Cowboy Stew is a hearty one-pot meal infused with tender beef, savory beans, and a variety of vegetables, perfect for warming up on chilly evenings.


Ingredients

  • 2 lbs chuck roast, cut into cubes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 bell pepper, chopped
  • 4 cups beef broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish


Instructions

  1. In a large heavy-bottomed pot, brown the cubed chuck roast over medium heat until browned on all sides.
  2. Add chopped onion and minced garlic; sauté until fragrant.
  3. Add carrots, potatoes, and bell pepper, and sauté for a few minutes.
  4. Stir in the chili powder, cumin, salt, and pepper.
  5. Mix in kidney beans and black beans, then add beef broth.
  6. Bring to a boil, then reduce heat and let it simmer for at least 30 minutes until flavors meld together and stew thickens.
  7. Serve hot, garnished with fresh parsley or cilantro.

Notes

For a spicy version, add diced jalapeños or a dash of hot sauce. You can also make it vegetarian by substituting beef with mushrooms or tempeh.
