Ingredients
- 2 tablespoons olive oil
 - 2 cloves garlic, minced
 - 1 onion, chopped
 - 2 celery stalks, chopped
 - 4 cups chicken broth
 - 2 cups cooked chicken, diced
 - 3 cups fresh spinach
 - 1 package gnocchi (about 16 oz)
 - 1 cup heavy cream
 - Salt and pepper to taste
 
Instructions
- Heat olive oil in a large pot over medium heat. Sauté garlic, onion, and celery until softened.
 - Add chicken broth and diced chicken. Bring to a simmer.
 - Stir in spinach and gnocchi, cooking until gnocchi are tender.
 - Reduce heat and stir in heavy cream. Season with salt and pepper before serving.
 
Notes
For a thicker soup, add a cornstarch slurry. Use fresh ingredients for best flavor.
