Description

A delightfully moist coffee cake combining tart cranberries and rich cream cheese, perfect for any coffee lover.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk
  • 1 cup fresh or dried cranberries
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Optional: Oats or chopped nuts for topping


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch cake pan.
  2. In a bowl, mix flour, sugar, baking powder, and salt.
  3. Add butter, eggs, and milk to the dry ingredients, and mix until just combined.
  4. Fold in the cranberries.
  5. In a separate bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
  6. Pour half of the batter into the prepared pan, swirl in the cream cheese mixture, and top with the remaining batter.
  7. Optional: Sprinkle oats or nuts on top.
  8. Bake for 35-40 minutes or until golden brown and a toothpick comes out clean.
  9. Let cool before serving.

Notes

Serve warm or at room temperature, dusted with powdered sugar. Store leftovers wrapped in an airtight container for up to 3 days.
