A delightfully moist coffee cake combining tart cranberries and rich cream cheese, perfect for any coffee lover.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup milk
- 1 cup fresh or dried cranberries
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Optional: Oats or chopped nuts for topping
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch cake pan.
- In a bowl, mix flour, sugar, baking powder, and salt.
- Add butter, eggs, and milk to the dry ingredients, and mix until just combined.
- Fold in the cranberries.
- In a separate bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
- Pour half of the batter into the prepared pan, swirl in the cream cheese mixture, and top with the remaining batter.
- Optional: Sprinkle oats or nuts on top.
- Bake for 35-40 minutes or until golden brown and a toothpick comes out clean.
- Let cool before serving.
Notes
Serve warm or at room temperature, dusted with powdered sugar. Store leftovers wrapped in an airtight container for up to 3 days.
