Ingredients

  • 1 package unflavored gelatin
  • 2 cups boiling water
  • 1 can cranberry sauce
  • 1 cup chopped nuts (walnuts or pecans)
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • Fresh mint leaves for garnish


Instructions

  1. Dissolve gelatin in boiling water.
  2. Combine the gelatin mixture with cranberry sauce and chopped nuts, and pour into a mold.
  3. Refrigerate until set, ideally overnight.
  4. In a bowl, whip together cream cheese, powdered sugar, and vanilla until smooth.
  5. Spread the cream cheese topping over the chilled Jello.
