Description

Delightful muffins combining the tartness of cranberries with the zest of orange, perfect for cozy weeknights.


Ingredients

  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 3/4 cup Granulated Sugar
  • 1/2 cup Unsalted Butter, melted
  • 2 large Eggs
  • 1/2 cup Whole Milk
  • 1 cup Fresh Cranberries
  • 1 teaspoon Orange Zest
  • 1/4 cup Fresh Orange Juice


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a muffin tin by greasing it or lining it with muffin liners.
  3. In a large mixing bowl, sift together the flour, baking powder, and salt.
  4. In another bowl, whisk together the sugar and melted butter until combined.
  5. Add the eggs one at a time to the butter-sugar mixture, whisking well after each addition.
  6. Pour in the milk, orange juice, and orange zest, stirring until smooth.
  7. Gradually fold the dry ingredients into the wet mixture until just combined.
  8. Gently fold in the fresh cranberries.
  9. Fill each muffin cup about two-thirds full with batter.
  10. Bake for 18-20 minutes or until a toothpick comes out clean.
  11. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack.

Notes

Serve warm with butter or coffee. Can be frozen for up to three months.
