Ingredients
- 1 cup pumpkin puree
- 2 large eggs
- 1/2 cup vegetable oil
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 cup fresh or dried cranberries
- 1/2 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix pumpkin puree, eggs, and vegetable oil until smooth.
- In another bowl, combine flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gently fold the dry ingredients into the wet mixture, being careful not to overmix.
- Fold in cranberries and pecans.
- Pour the batter into a greased loaf pan.
- Bake for 60 minutes, or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
For best results, allow the batter to rest before baking. Use canned pumpkin puree for best flavor.
