  • 4 ounces cream cheese, softened
  • Your choice of jam (e.g., raspberry, blackberry)
  • Maple syrup (for serving)
  • Fresh berries (for serving)
  • Powdered sugar (for dusting)


Instructions

  1. In a bowl, mix flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together milk, egg, and melted butter.
  3. Combine wet and dry ingredients, mixing gently until just combined.
  4. In a separate bowl, combine softened cream cheese with a bit of jam to create the filling.
  5. Preheat a griddle over medium heat and lightly grease it.
  6. Pour 1/4 cup of pancake batter onto the griddle.
  7. Spoon a dollop of the cream cheese mixture onto the center of the batter.
  8. Encapsulate the filling with more batter, then cook until bubbles form on the surface, about 2-3 minutes.
  9. Flip and cook for an additional 2-3 minutes until golden brown.
  10. Repeat with remaining batter and filling.
  11. Serve with maple syrup, fresh berries, and a dusting of powdered sugar.

Notes
