Ingredients
- 8 slices Thick Bread (Brioche or Challah)
- 8 ounces Whipped Cream Cheese
- 3 large Eggs, beaten
- 1.5 cups Skim Milk
- 1 teaspoon Ground Cinnamon
- 0.5 teaspoon Vanilla Extract
- 4 tablespoons Butter
- Powdered Sugar (for garnish)
- 12 ounces Blackberries
- 1 tablespoon Lemon Zest
- 1 tablespoon Lemon Juice
- 0.5 teaspoon Additional Vanilla Extract
- 0.25 cup White Sugar
- 0.25 cup Water
- 1 tablespoon Corn Starch
Instructions
- In a saucepan, combine blackberries, lemon zest, lemon juice, sugar, water, and corn starch. Cook over medium heat until it starts to bubble, stirring occasionally for about 5-7 minutes until thickened. Remove from heat and set aside.
- In a mixing bowl, whisk together the eggs, skim milk, ground cinnamon, and vanilla extract to create the custard mixture.
- Spread whipped cream cheese on one side of each slice of bread, then place another slice on top to make a sandwich.
- Heat butter in a skillet over medium heat. Dip each sandwich into the custard mixture, ensuring both sides are coated.
- Cook the dipped sandwiches in the skillet for about 3-4 minutes on each side, or until golden brown.
- Remove from heat and let rest for a minute.
- Serve warm topped with blackberry compote and a dusting of powdered sugar.
