Description
A wholesome and comforting pudding combining creamy yogurt, stewed apples, and crunchy oats, perfect for breakfast or a snack.
Ingredients
- 1 cup Unsweetened Plain Plant-Based Yogurt
- 1/4 cup Apple Butter
- 4 units Medjool Dates
- 1 tablespoon Yellow Miso Paste
- 1 teaspoon Vanilla Extract
- 1 teaspoon Cinnamon
- 1/2 teaspoon Cardamom
- 1/4 teaspoon Kosher Salt
- 1 cup Soy Milk
- 1/4 cup Chia Seeds
- 1 cup Gluten-Free Rolled Oats
- 1/2 cup Walnuts or Pecans
- 2 cups Apples (Granny Smith or Fuji)
- 1 tablespoon Maple Syrup
Instructions
- Soak the chia seeds in soy milk for about 30 minutes until they swell and thicken.
- In a saucepan, cook chopped apples with apple butter, maple syrup, cinnamon, cardamom, and salt over medium heat until softened, about 5-7 minutes.
- In a bowl, combine the plant-based yogurt, miso paste, dates, and vanilla extract. Stir until smooth.
- Once the chia seeds have soaked, mix them into the yogurt mixture.
- Layer the chia pudding in a glass or bowl with warm stewed apples, oats, and nuts. Top with additional cinnamon or nuts.
Notes
Serve warm or chilled. Store leftovers in an airtight container in the refrigerator for 2-3 days.
