Ingredients
- 8 ounces Cavatappi Noodles
- 1 pound Large Shrimp, raw and deveined
- 2 tablespoons Blackened Seasoning
- 2 tablespoons Unsalted Butter
- 1 cup Heavy Cream
- 2 tablespoons Tomato Paste
- 1/2 cup Sour Cream
- 1/2 cup Parmesan Cheese, grated
- 1 cup Sweet Corn
- 2 tablespoons Green Onion, chopped
Instructions
- Cook the cavatappi noodles according to the package instructions. Drain and set aside.
- In a large skillet, melt the butter over medium heat.
- Add the raw shrimp to the skillet and sprinkle the blackened seasoning on top. Cook for about 2-3 minutes on each side or until the shrimp turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the heavy cream and tomato paste. Stir well to combine and bring to a gentle simmer.
- Mix in the sour cream and grated Parmesan cheese, stirring until melted and creamy.
- Add the sweet corn and cooked shrimp back to the skillet, mixing everything until well combined and heated through.
- Fold in the cooked cavatappi, ensuring all the pasta is coated in the creamy sauce.
- Serve immediately, garnished with chopped green onions.
Notes
For added flavor, sprinkle some extra Parmesan cheese and green onions on top before serving.
