Boursin Orzo with Chicken

Description

A delightful dish combining tender chicken, creamy orzo, and flavorful Boursin cheese, perfect for comforting dinners.


Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 4 boneless, skinless chicken breasts
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 2 cups chicken broth
  • 1 cup fresh spinach, chopped
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt (add more if you like)
  • 1 wheel (5.2 oz) Boursin Garlic & Fine Herbs cheese
  • Fresh parsley, chopped
  • 1/4 cup shredded Parmesan cheese


Instructions

  1. Sprinkle garlic powder, paprika, salt, and pepper over both sides of your chicken.
  2. Pour olive oil into your skillet and set it to medium heat.
  3. Add in the chicken and let it sizzle for 4–5 minutes. Flip the chicken and repeat until it’s cooked and looks golden brown. Remove it from the skillet and set aside.
  4. Toss the orzo into the same skillet and stir it for a couple of minutes to avoid burning.
  5. Pour in the chicken broth and increase the heat until it starts bubbling. Cover it with a lid and stir it occasionally. Cook for about 8–10 minutes until the orzo is soft but not mushy.
  6. Lower the heat and mix in the heavy cream and Boursin cheese. Stir until you have a smooth, cheesy sauce.
  7. Add in the chopped spinach and stir until the leaves wilt, which should take about a minute.
  8. Slide the cooked chicken back into the skillet and let everything warm together.
  9. Before serving, sprinkle on some Parmesan and fresh parsley if desired. Serve it up!

Notes

Make sure not to overcook the orzo; it should be soft but still firm to the bite. Use fresh spinach for enhanced flavor and color.
