Description

A rich and creamy pasta dish that’s quick and satisfying for any weeknight dinner.


Ingredients

  • 12 oz cavatappi pasta
  • 1 tablespoon salt (for pasta water)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish


Instructions

  1. Boil a large pot of salted water and cook the cavatappi until al dente.
  2. In a separate pan, heat olive oil over medium heat and sauté minced garlic until fragrant.
  3. Add heavy cream and bring to a gentle simmer, stirring constantly.
  4. Gradually add in the grated Parmesan cheese, whisking until the sauce is smooth.
  5. Once pasta is cooked, reserve a cup of pasta water, drain pasta, and combine with the sauce.
  6. If the sauce is too thick, add reserved pasta water until desired consistency is achieved.
  7. Garnish with fresh herbs and serve immediately.

Notes

Reserve pasta water to adjust the sauce consistency if needed. Use fresh ingredients for the best flavor.
