Ingredients
- 1 cup Cottage Cheese (low-fat recommended)
- 1/2 cup Creamy Peanut Butter (or almond/cashew butter)
- 2 tablespoons Honey or Maple Syrup (or agave nectar for vegan option)
- 1 teaspoon Vanilla Extract (preferably pure)
- 1-2 tablespoons Unsweetened Cocoa Powder (optional)
- 1/4 cup Milk (dairy or plant-based)
- 1 medium Sliced Banana (or fresh berries)
- 1/4 cup Granola (for added crunch)
Instructions
- Place cottage cheese and peanut butter in a mixing bowl.
- Add honey (or maple syrup), vanilla extract, and cocoa powder (if using) to the bowl.
- Blend everything together using a hand mixer or food processor until smooth and creamy.
- Gradually add milk to achieve desired consistency and mix well.
- Stir in sliced banana or berries, if using.
- Transfer the mousse into serving bowls or cups.
- Top with granola for extra crunch before serving.
Notes
Serve chilled or layer in a parfait glass for a colorful presentation. Store in an airtight container in the refrigerator for up to 3 days.
