A comforting and flavorful slow-cooked chicken soup that’s perfect for busy days.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1 tsp dried basil
- 1 tsp garlic powder
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Add chicken, broth, sun-dried tomatoes, basil, garlic powder, red pepper flakes, and salt to the Crockpot.
- Cook on low for 6-7 hours or high for 3-4 hours.
- Shred the chicken and stir in heavy cream and Parmesan cheese.
- Cook on high for another 10-15 minutes and serve with fresh basil.
Notes
For extra flavor, marinate the chicken overnight. Use cornstarch for a thicker soup, and consider adding vegetables like spinach or mushrooms.
