Description

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish


Instructions

  1. Add chicken, broth, sun-dried tomatoes, basil, garlic powder, red pepper flakes, and salt to the Crockpot.
  2. Cook on low for 6-7 hours or high for 3-4 hours.
  3. Shred the chicken and stir in heavy cream and Parmesan cheese.
  4. Cook on high for another 10-15 minutes and serve with fresh basil.

Notes

For extra flavor, marinate the chicken overnight. Use cornstarch for a thicker soup, and consider adding vegetables like spinach or mushrooms.
