Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lb)
- Salt and pepper, to taste
- 1-2 tablespoons olive oil
- 2 tablespoons butter
- 4 minced garlic cloves
- 1/2 cup dry white wine or chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- Chopped parsley, for garnish
- Lemon, for squeezing over the dish
Instructions
- Season the chicken breasts with salt, pepper, and a light dusting of flour or cornstarch.
- Sear the chicken in olive oil over medium-high heat for 5-7 minutes per side until golden brown and internal temperature reads 160-165°F.
- Remove the chicken from the pan and lower the heat to medium-low.
- Add butter and minced garlic to the pan, cooking for 30-45 seconds until fragrant.
- Deglaze the pan with wine or chicken broth, scraping up the browned bits.
- Stir in heavy cream and Parmesan cheese, then simmer for 3-5 minutes until slightly thickened.
- Return the chicken to the sauce and heat through until reaching 165°F.
- Garnish with chopped parsley and a squeeze of lemon before serving.
Notes
For a gluten-free version, skip the flour or use cornstarch mixed into the cream. For a dairy-free option, substitute coconut milk and dairy-free Parmesan.
