Description
A healthy yet indulgent dish featuring roasted spaghetti squash filled with a creamy garlic and parmesan mixture.
Ingredients
- 1 large spaghetti squash
- 8 oz cream cheese, softened
- 1 cup grated parmesan cheese
- 3 cloves garlic, minced
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Salt to taste
- Fresh parsley or basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and remove the seeds.
- Place the squash cut-side down on a baking sheet lined with parchment paper and roast for 30-40 minutes, until tender.
- While the squash cooks, mix the cream cheese, parmesan cheese, and minced garlic in a bowl until well combined.
- Once the squash is cooked and cool enough to handle, scoop out the strands into the cheese mixture and mix well.
- Stuff the mixture back into the squash halves, top with more parmesan, and bake for an additional 10-15 minutes until bubbly and golden.
- Garnish with fresh parsley or basil before serving.
Notes
For a vegan version, you can use vegan cream cheese and nutritional yeast.
