Description

A healthy yet indulgent dish featuring roasted spaghetti squash filled with a creamy garlic and parmesan mixture.


Ingredients

  • 1 large spaghetti squash
  • 8 oz cream cheese, softened
  • 1 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt to taste
  • Fresh parsley or basil for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and remove the seeds.
  3. Place the squash cut-side down on a baking sheet lined with parchment paper and roast for 30-40 minutes, until tender.
  4. While the squash cooks, mix the cream cheese, parmesan cheese, and minced garlic in a bowl until well combined.
  5. Once the squash is cooked and cool enough to handle, scoop out the strands into the cheese mixture and mix well.
  6. Stuff the mixture back into the squash halves, top with more parmesan, and bake for an additional 10-15 minutes until bubbly and golden.
  7. Garnish with fresh parsley or basil before serving.

Notes

For a vegan version, you can use vegan cream cheese and nutritional yeast.
