Description
A cherished Indian classic dessert made from rice, milk, and flavored with cardamom and nuts.
Ingredients
- 1/2 cup basmati rice
- 4 cups whole milk
- 3/4 cup sugar
- 1/2 teaspoon cardamom powder
- 1/4 cup chopped almonds
- 1/4 cup chopped cashews
- 1/4 cup chopped pistachios
- 2 tablespoons ghee
Instructions
- Wash the basmati rice thoroughly and drain.
- In a heavy-bottomed pot, combine rice and whole milk over low heat.
- Cook, stirring occasionally, until the rice is tender and the milk thickens (about 30 minutes).
- Add sugar and cardamom powder, stirring well to combine.
- In a separate pan, heat ghee and toast the chopped nuts until golden, then fold into the kheer.
- Remove from heat and let cool slightly before serving.
- Garnish with additional nuts and serve warm or chilled.
Notes
Kheer thickens as it cools, so serve chilled or at room temperature. Can add saffron or fruit for variations.
