Description

A cherished Indian classic dessert made from rice, milk, and flavored with cardamom and nuts.


Ingredients

  • 1/2 cup basmati rice
  • 4 cups whole milk
  • 3/4 cup sugar
  • 1/2 teaspoon cardamom powder
  • 1/4 cup chopped almonds
  • 1/4 cup chopped cashews
  • 1/4 cup chopped pistachios
  • 2 tablespoons ghee


Instructions

  1. Wash the basmati rice thoroughly and drain.
  2. In a heavy-bottomed pot, combine rice and whole milk over low heat.
  3. Cook, stirring occasionally, until the rice is tender and the milk thickens (about 30 minutes).
  4. Add sugar and cardamom powder, stirring well to combine.
  5. In a separate pan, heat ghee and toast the chopped nuts until golden, then fold into the kheer.
  6. Remove from heat and let cool slightly before serving.
  7. Garnish with additional nuts and serve warm or chilled.

Notes

Kheer thickens as it cools, so serve chilled or at room temperature. Can add saffron or fruit for variations.
