Ingredients

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 lb chicken breast, diced
  • 4 cups chicken broth
  • 2 cups short pasta (e.g., ditalini)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Fresh parsley or green onions for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion, garlic, and bell pepper until softened.
  2. Add diced chicken and cook until browned.
