Description
A cozy and hearty soup made with Italian sausage, creamy Parmesan, and ditalini pasta.
Ingredients
- 1 lb Italian sausage
- 1 cup diced onions
- 2 cloves garlic, minced
- 1 tsp Italian herbs
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 cup ditalini pasta
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Brown the Italian sausage in a large pot over medium heat, breaking it up until nicely browned.
- Add the chopped onions, garlic, and Italian herbs; sauté until fragrant.
- Stir in the diced tomatoes and chicken broth; allow to simmer.
- Once simmering, add in the ditalini pasta.
- After the pasta is cooked, stir in the grated Parmesan cheese until melted and creamy.
- Serve hot, garnished with fresh parsley and extra Parmesan.

Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
