Description

A cozy and hearty soup made with Italian sausage, creamy Parmesan, and ditalini pasta.


Ingredients

  • 1 lb Italian sausage
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 tsp Italian herbs
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup ditalini pasta
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Brown the Italian sausage in a large pot over medium heat, breaking it up until nicely browned.
  2. Add the chopped onions, garlic, and Italian herbs; sauté until fragrant.
  3. Stir in the diced tomatoes and chicken broth; allow to simmer.
  4. Once simmering, add in the ditalini pasta.
  5. After the pasta is cooked, stir in the grated Parmesan cheese until melted and creamy.
  6. Serve hot, garnished with fresh parsley and extra Parmesan.
