Description
A quick and healthy pasta meal packed with protein, using whole grain pasta, cottage cheese, spinach, and chicken.
Ingredients
- 2 cups Whole Wheat Pasta
- 2 tablespoons Olive Oil
- 2 cloves Garlic (minced)
- 1 cup Low-Fat Cottage Cheese
- 1/4 cup Grated Parmesan Cheese
- 1 teaspoon Italian Seasoning
- to taste Salt
- to taste Pepper
- 2 cups Fresh Spinach
- 1 cup Cherry Tomatoes (halved)
- 1 cup Cooked Chicken Breast (shredded)
- 1 tablespoon Fresh Basil (optional garnish)
Instructions
- Cook the whole wheat pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the low-fat cottage cheese, grated Parmesan, Italian seasoning, salt, and pepper. Mix well until creamy.
- Add the cooked pasta to the skillet and toss to combine with the sauce.
- Fold in the fresh spinach and cherry tomatoes, and allow them to wilt slightly.
- Finally, add the shredded chicken and stir until everything is heated through.
- Serve hot, garnished with fresh basil if desired.
Notes
Make sure to use freshly minced garlic for the best flavor. If the pasta seems dry, add a splash of pasta cooking water while mixing.
