Delicious and healthy pumpkin-flavored overnight oats made with simple ingredients, perfect for a quick breakfast any time of the year.
Ingredients
- 1 cup rolled oats
 - 1 cup canned pumpkin puree
 - 1 cup almond milk (or any milk of choice)
 - 2 tbsp maple syrup (adjust to taste)
 - 2 tsp pumpkin spice blend
 - 2 tbsp chia seeds
 - 1 tsp vanilla extract
 
Instructions
- In a mixing bowl, combine rolled oats, chia seeds, and pumpkin spice blend; mix well.
 - Add canned pumpkin puree, almond milk, maple syrup, and vanilla extract; stir until thoroughly combined.
 - Transfer the mixture into jars or airtight containers.
 - Seal tightly and refrigerate for at least 4 hours or overnight.
 - In the morning, give the oats a good stir. Serve cold or warm as desired.
 
Notes
Store in airtight containers in the refrigerator for up to 5 days. Stir before serving if ingredients settle.
