Description

Ingredients

  • 1 head of garlic
  • 2 cans of chickpeas, rinsed and drained
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh herbs for garnish (parsley or cilantro)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap the garlic head in foil and roast for 30-35 minutes until soft and golden.
  3. In a pot, combine the roasted garlic, chickpeas, vegetable broth, and olive oil.
  4. Blend until smooth using an immersion blender or a high-powered blender.
  5. Season with salt and pepper to taste.
