Ingredients

- 1 medium onion, chopped
- 2 garlic cloves, minced
- 4 cups fresh or frozen spinach
- 4 cups vegetable broth
- 1 cup Gruyere cheese, shredded
- Salt and pepper to taste
- Heavy cream (optional, for serving)
Instructions
- Heat olive oil in a pot over medium heat, sauté onions and garlic until fragrant and just golden.
- Add spinach and cook until wilted.
- Pour in vegetable broth and bring to a simmer.
- Blend the mixture until creamy.
- Stir in Gruyere cheese until melted. Season with salt and pepper to taste.
