Description

A rich and creamy pasta dish with spinach and ricotta, perfect for a quick weeknight dinner.


Ingredients

  • 300g pasta (e.g., penne or rigatoni)
  • 200g fresh spinach
  • 250g ricotta cheese
  • 100g grated Parmesan
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 100ml heavy cream


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted.
  4. Stir in ricotta cheese, Parmesan, heavy cream, salt, pepper, and nutmeg. Mix until well combined.
  5. Add the cooked pasta to the skillet and toss to coat with the creamy sauce.
  6. Serve hot, garnished with additional Parmesan if desired.

Notes

For an extra creamy texture, add a splash more of heavy cream. Pair with a crisp green salad for a complete meal.
