Description

A comforting and quick dish that combines tender chicken, creamy sauce, and flavorful orzo pasta, perfect for busy weeknights.


Ingredients

  • 2 tablespoons Olive Oil
  • 3 cloves Minced Garlic
  • 1 teaspoon Italian Seasoning
  • 14.5 ounces Diced Tomatoes (with juice)
  • 2 cups Chicken Broth
  • 1 cup Heavy Cream
  • 1 cup Orzo Pasta
  • 1 pound Chicken Breast
  • 1/2 cup Grated Parmesan
  • 2 cups Baby Spinach
  • 1/4 cup Fresh Basil
  • to taste Black Pepper


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the Italian seasoning and diced tomatoes (with juice). Cook for 2-3 minutes, letting the flavors blend.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Add the orzo pasta and cook for about 8-10 minutes, stirring occasionally, until al dente.
  6. Season the chicken breasts with salt and pepper. In a separate pan, cook the chicken over medium heat until it’s no longer pink, about 6-7 minutes on each side. Once cooked, chop into bite-sized pieces.
  7. When the orzo is done cooking, lower the heat and stir in the heavy cream. Mix well until creamy.
  8. Add the chopped chicken, baby spinach, and grated Parmesan. Stir until the spinach wilts and everything is combined. Season with black pepper to taste.
  9. Garnish with fresh basil before serving.

Notes

For added flavor, marinate the chicken in Italian seasoning for an hour before cooking. Add red pepper flakes for a kick.
