A comforting and quick dish that combines tender chicken, creamy sauce, and flavorful orzo pasta, perfect for busy weeknights.
Ingredients
- 2 tablespoons Olive Oil
- 3 cloves Minced Garlic
- 1 teaspoon Italian Seasoning
- 14.5 ounces Diced Tomatoes (with juice)
- 2 cups Chicken Broth
- 1 cup Heavy Cream
- 1 cup Orzo Pasta
- 1 pound Chicken Breast
- 1/2 cup Grated Parmesan
- 2 cups Baby Spinach
- 1/4 cup Fresh Basil
- to taste Black Pepper
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the Italian seasoning and diced tomatoes (with juice). Cook for 2-3 minutes, letting the flavors blend.
- Pour in the chicken broth and bring the mixture to a boil.
- Add the orzo pasta and cook for about 8-10 minutes, stirring occasionally, until al dente.
- Season the chicken breasts with salt and pepper. In a separate pan, cook the chicken over medium heat until it’s no longer pink, about 6-7 minutes on each side. Once cooked, chop into bite-sized pieces.
- When the orzo is done cooking, lower the heat and stir in the heavy cream. Mix well until creamy.
- Add the chopped chicken, baby spinach, and grated Parmesan. Stir until the spinach wilts and everything is combined. Season with black pepper to taste.
- Garnish with fresh basil before serving.
Notes
For added flavor, marinate the chicken in Italian seasoning for an hour before cooking. Add red pepper flakes for a kick.
