Description

A delightful balance between indulgence and health; a moist and rich yogurt cake that is light and guilt-free.


Ingredients

  • 1 cup plain yogurt (full-fat or Greek)
  • 3 large eggs
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup vegetable oil


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round baking pan.
  2. In a bowl, mix yogurt, eggs, sugar, and vanilla extract until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Pour in the vegetable oil and mix until incorporated.
  6. Transfer the batter to the prepared baking pan.
  7. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool for 10 minutes in the pan before transferring to a wire rack to cool completely.

Notes

Serve with fresh berries, a drizzle of honey, or lightly whipped cream. Store wrapped at room temperature for up to 3 days or freeze for up to 3 months.
