  • 8-10 spring roll wrappers
  • Water (for sealing edges)
  • Vegetable oil (for shallow frying)
  • 2 tablespoons tamarind paste or concentrate
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 2-3 tablespoons water (adjust for desired consistency)


Instructions

  1. In a bowl, mash the ripe avocados until smooth but slightly chunky. Add chopped cilantro, fresh lime juice, and finely diced jalapeño or chili flakes. Mix gently to combine all flavors harmoniously.
  2. Lay a spring roll wrapper flat and place a generous spoonful of the avocado filling near one corner. Fold over the edges, then roll tightly to enclose the filling. Seal the final edge with a dab of water to keep them secure during frying.
  3. In a small bowl, whisk together tamarind paste, brown sugar, soy sauce, and a splash of water. Adjust sweetness or tartness to your liking, then set aside to let the flavors meld.
  4. Heat vegetable oil in a pan over medium heat. Carefully place the rolled egg rolls seam side down into the hot oil. Fry until crisp and golden brown, turning occasionally to cook evenly on all sides. Remove and drain on paper towels.
  5. Plate the crispy, golden egg rolls alongside the tamarind dipping sauce. Enjoy warm for the best crunchy and creamy experience.
