Ingredients

  • 2 pounds Yukon Gold or Russet Potatoes, scrubbed and cut into uniform cubes
  • 1/4 cup Extra Virgin Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 handful Fresh Parsley, chopped for garnish
  • Shredded Cheese
  • Diced Green Onions
  • Sour Cream


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the potatoes thoroughly and pat them dry.
  3. Cut the potatoes into even cubes, approximately 1-inch in size.
  4. In a large mixing bowl, combine the cubed potatoes with olive oil.
  5. Add garlic powder, onion powder, smoked paprika, salt, and black pepper. Toss until evenly coated.
  6. Spread the seasoned potatoes in a single layer on a baking sheet.
  7. Roast the potatoes for about 25-30 minutes, flipping halfway through.
  8. Check for doneness; ensure they are golden brown and crispy.
  9. Transfer to a serving bowl and garnish with fresh parsley.
