Ingredients
- 1 head of cauliflower, chopped into small florets
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Parchment paper (for baking)
Instructions
- Preheat your oven to 425°F (220°C).
- Pulse chopped cauliflower florets in a food processor until rice-sized.
- Steam the cauliflower, then cool and squeeze out excess moisture using a cheesecloth or kitchen towel.
- In a bowl, mix the cauliflower ‘rice’ with mozzarella, Parmesan, eggs, garlic powder, Italian seasoning, salt, and pepper.
- Form mixture into bite-sized balls and arrange them on a lined baking sheet.
- Bake for about 25 minutes or until golden and crispy.
Notes
Serve warm with marinara sauce or ranch dressing. Store leftovers in an airtight container for up to 3 days.
