Description

A fun and healthful snack that satisfies pizza cravings with crispy cauliflower bites packed with flavor.


Ingredients

  • 1 head of cauliflower, chopped into small florets
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Parchment paper (for baking)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pulse chopped cauliflower florets in a food processor until rice-sized.
  3. Steam the cauliflower, then cool and squeeze out excess moisture using a cheesecloth or kitchen towel.
  4. In a bowl, mix the cauliflower ‘rice’ with mozzarella, Parmesan, eggs, garlic powder, Italian seasoning, salt, and pepper.
  5. Form mixture into bite-sized balls and arrange them on a lined baking sheet.
  6. Bake for about 25 minutes or until golden and crispy.

Notes

Serve warm with marinara sauce or ranch dressing. Store leftovers in an airtight container for up to 3 days.
