Ingredients
- 2 cups sushi rice
 - 1/4 cup rice vinegar
 - 1 teaspoon sugar
 - 1/2 teaspoon salt
 - Nori sheets
 - Vegetable oil (for deep frying)
 - Tempura batter (for coating)
 - Fillings of choice (e.g., avocado, cucumber, crab meat)
 
Instructions
- Rinse sushi rice under cold water until the water runs clear.
 - Cook the sushi rice according to package instructions.
 - Once cooked, mix rice vinegar, sugar, and salt into the rice and let it cool.
 - Lay out a nori sheet and spread an even layer of sushi rice on top.
 - Add your choice of fillings in a line, then roll tightly to form a log.
 - Cut the roll into pieces and dip them in tempura batter.
 - Heat vegetable oil in a deep frying pan to 350°F (175°C).
 - Fry the rolls in small batches until golden brown, then remove and drain on paper towels.
 
Notes
Let rolls cool on a paper towel to absorb excess oil for added crunch. Experiment with different fillings!
