Ingredients
- 4 large Russet potatoes

Instructions
- Preheat your oven to 425°F (220°C).
- Roast whole potatoes until tender, about 45-60 minutes.
- Allow potatoes to cool, then scoop out the insides, leaving some flesh for structure.
- Toss the potato skins with olive oil, minced garlic, and herbs, and season with salt and pepper.
- Place the skins on a wire rack over a baking sheet and bake for 15-20 minutes or until crispy.
