  • 2 lbs starchy potatoes (Russets or Yukon Golds)

  • 4 tbsp unsalted butter
  • 1 cup grated Parmesan cheese
  • 1 egg (for egg wash)
  • Salt and pepper to taste


Instructions

  1. Boil peeled or unpeeled potatoes until fork-tender.
  2. Drain and dry the potatoes to remove excess moisture.
  3. Mash the potatoes with roasted garlic, butter, and grated Parmesan until smooth.
  4. Pipe the mixture into star shapes on a baking sheet.
  5. Brush with egg wash and bake until golden brown, about 30-35 minutes.
