Description

A delightful one-pot meal combining tender chicken, creamy feta, and nutrient-packed spinach with vibrant Mediterranean flavors.


Ingredients

  • 4-6 chicken breasts or thighs
  • 1 can diced tomatoes
  • 1/2 cup olives, sliced
  • 1/2 cup chicken broth
  • 1/2 cup feta cheese, crumbled
  • 2 cups fresh spinach
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 3 cloves garlic, minced
  • Salt and pepper to taste


Instructions

  1. Season chicken with oregano, basil, garlic, salt, and pepper.
  2. Place seasoned chicken in the slow cooker.
  3. Add diced tomatoes, olives, and chicken broth.
  4. Cover and cook on low for 6 hours or on high for 4 hours.
  5. In the last 30 minutes of cooking, add feta cheese and spinach.
  6. Let it sit for 10 minutes before serving.

Notes

For added flavor, marinate the chicken in spices the night before. Adjust cooking time if using frozen chicken.
