Ingredients
- 4-6 chicken breasts or thighs
- 1 can diced tomatoes
- 1/2 cup olives, sliced
- 1/2 cup chicken broth
- 1/2 cup feta cheese, crumbled
- 2 cups fresh spinach
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 3 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Season chicken with oregano, basil, garlic, salt, and pepper.
- Place seasoned chicken in the slow cooker.
- Add diced tomatoes, olives, and chicken broth.
- Cover and cook on low for 6 hours or on high for 4 hours.
- In the last 30 minutes of cooking, add feta cheese and spinach.
- Let it sit for 10 minutes before serving.
Notes
For added flavor, marinate the chicken in spices the night before. Adjust cooking time if using frozen chicken.
