Description

A comforting and flavorful casserole made with tender chicken, creamy cheese, and hearty vegetables, perfect for busy weeknights.


Ingredients

  • 4 chicken breasts
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 2 cups shredded cheese (cheddar, mozzarella, or pepper jack)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups mixed vegetables (like broccoli, carrots, and peas)
  • Salt and pepper to taste
  • Additional spices (optional)


Instructions

  1. Season chicken breasts with salt, pepper, and your favorite spices.
  2. Place chicken at the bottom of the crockpot.
  3. Add chopped onions, garlic, and mixed vegetables on top of the chicken.
  4. In a bowl, mix together the cream of chicken soup and chicken broth, then pour over the ingredients in the crockpot.
  5. Add a generous amount of shredded cheese on top.
  6. Set the crockpot to low for 6-8 hours or high for 4 hours.
  7. Once cooked, stir to combine and serve directly from the crockpot.

Notes

For added flavor, you can brown the chicken before placing it in the crockpot. Use a slow cooker liner for easy cleanup.
