Description
A comforting dish featuring tender beef, crisp bell peppers, and a savory sauce made easily in a slow cooker.
Ingredients
- 1.5–2 lb flank or sirloin beef
- 1 tsp salt
- 1/2 tsp black pepper
- 3–4 cups mixed bell peppers, sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1/3 cup low-sodium soy sauce
- 1/2 cup beef broth
- 2 tbsp brown sugar
- 1 tbsp Worcestershire sauce
- 2 tbsp cornstarch
- 2 tbsp cold water
Instructions
- Slice the beef thinly across the grain into 1/4-inch strips. Toss with salt and pepper.
- Optionally, sear the beef in a hot skillet for 1–2 minutes per side.
- Add sliced peppers, onion, garlic, soy sauce, beef broth, brown sugar, and Worcestershire sauce to the slow cooker.
- Cook on LOW for 4–6 hours or HIGH for 2–3 hours.
- Toward the end, mix cornstarch and cold water to make a slurry and stir into the slow cooker.
- Cook uncovered on HIGH for 10–15 minutes until the sauce thickens.
Notes
Searing the beef adds depth of flavor. Adjust the sauce thickness as desired by using a cornstarch slurry.
